Danish Meatballs
This is a Danish recipe my grandmother use to make. It’s her version of Danish meatballs with tomato sauce. You can always add more dry sherry- it really helps.
Serves 10 people as an appetizer
2 slices of stale white bread
1/2 pound blue cheese
3 tablespoons clarified butter, divided
Preheat oven to 200 degrees F.
Tear the bread into pieces and place in a mixing bowl.
Saute over medium heat 1 tablespoon of butter, onions, salt and pepper until the onions are soft. Remove from the heat and set aside.
In a bowl combine the bread, ground chuck, pork, egg yolks, 1 teaspoon of salt, allspice, nutmeg, and onions. Add blue cheese and mix for 1 to 2 minutes.
Shape the meatballs into rounds.
Heat the remaining butter in the saute pan over medium-low heat. Add the meatballs and saute until golden brown on all sides. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven. Add the tomato sauce mixed with the dry sherry.
Bake at 200 degrees F for 30 minutes or until meatballs are cooked.
